Peru is the biggest exporter of certified organic coffee, mostly from smallholders in co-operatives along the eastern Andes. The cup is gentle and sweet rather than loud, which makes it a good everyday filter or a mild espresso. Cajamarca lots from Jaén and San Ignacio are the ones roasters get excited about.
