Indonesia

Heavy, earthy and unusual. Wet-hulled Sumatrans with body like syrup, plus cleaner lots from Java, Bali and Flores.

Sumatran coffee is processed in a way found nowhere else: the parchment is removed while the bean is still wet, which gives the dark, savoury, full-bodied cup people either love or avoid. It takes a dark roast and a lot of milk without losing itself, so it is a classic in cafetière and espresso blends. If you want brightness, look to Bali or Flores instead.
