Sweet and gentle. Bourbon and Pacamara from small volcanic farms, often honey processed.
Small country, big reputation. Most farms are family owned and many still grow Bourbon, which gives a rounded sweetness that works beautifully as espresso. Pacamara, a giant-beaned local cross, is the one to try as filter when you want something unusual without the funk of an anaerobic.
